Carrots and Nothing Else Cake

What you need: 

1/2 cup canola oil
1/2 cup apple sauce (you can use oil also if you don't want the "lower fat" version)
3 egg replacers (flax seed and Ener-g eggs both work well)
1 1/2 cups sugar
3 cups shredded carrot
2 cups flour
1/2 teaspoon salt
1 teaspoon baking soda
2 teaspoons cinnamon or pie spice

What you do: 

1. Preheat oven to 350 degrees F. Mix all of the wet ingredients and the sugar in a bowl until well mixed. Add the carrots and mix.
2. In a separate bowl, mix together the dry ingredients. Once both bowls are ready, mix together to form batter.
3. Pour into a 9x13" cake pan. Put into oven for about 40 minutes. It is done when a toothpick comes out clean. If you use other sized pans (rounds, for example) be sure to adjust your baking time.
4. Let cool and enjoy! I just put powered sugar on mine but you can be more creative.
Feel free to also add other goodies, like coconut, walnuts, or whatever sounds good to you.
Source of recipe: This is a modified version of a carrot cake recipe I have. All of the vegan recipes I was finding had other ingredients (pineapple, coconut, etc) in them. I wanted straight up carrot cake. This makes a nice, moist cake. My officemate and carrot cake lover requests this.

Have you tried this without any oil?
This probably sounds really silly, but does the flax seed have to be ground?

The flax seeds do have to be ground, otherwise they won't function like eggs, they'll just be flax seeds floating around in the recipe...

How much ground flax seeds equal one "egg"?

I used whole wheat flour, demerara sugar, 1/4 c earth balance and 1/4 c cinnamon apple sauce plus 2 t baking powder, and made it into muffins. (350 for 26 minutes)    my boyfriend and 1 ate the whole delicious dozen in 2 days!  i did the nutritional analysis and only 6 g of fat per muffin!

I am definitely interested in making this but is there is any other substitute that can be used in place of sugar? I am trying to ween myself off of that and was curious what might be sufficient replacement? :-\

i find that honey, brown rice syrup or maple syrup work well.  much more nutrient dense.  1 cup of honey is about equal to 2 cups sugar.

The first time that I made this my boyfriend and I skipped dinner and ate half of this cake instead. It was amazing. I've made it twice since then for different occasions and it is always a hit. I highly reccomend!

Very good and super moist! Kept everything tha same and added a few raisins. I think this is going to be my carrot cake recipe from now on!

I made this for my 6 year old daughter's birthday. I'm making it again today for my husband's birthday. Fantastic. We vegans eat so well  :)

This cake is so moist and delicious, without adding unnecessary oil. It tastes much fresher than store bought carrot cake, and I'd like to think that it's better for me as well. I added some chopped walnuts to the batter, and next time, maybe I'll add some soaked raisins. Yum, this is going to become a regular in my house. Thanks!

This carrot cake is amazing, I could seriously live off of it and nothing else. Granted that I'd gain 100 lbs and eventually die, but it'd all be worth it. PERFECT carrot cake! Without the goofy pineapple and gobs of oil that are in most. Definitely my favorite carrot cake recipe that I've ever made.  ;D

Best carrot cake ever - though I cut down on the sugar and think I will eliminate even more next time.  Too sweet to add icing too.  But sooo good!
