Cauliflower Millet Miso

What you need: 

one head of cauliflower,stem removed, broken into large peices
one half cup of white miso
one cup of millet
three large carrots, diced
one medium onion, diced

What you do: 

Put cauliflower, onion, and carrots in a medium sized pot of water or vegetable stock. Bring to a boil, lower heat and cook for 20 minutes. Add the millet and cook for 10 minutes, Uncover, add the miso, stir and cook 5 minutes. Enjoy

SO HOW'D IT GO?

Interesting recipe. I wasn't sure if this was intended to be more of a soup or a vegetable side dish that can be served on a plate--I guess it just depends on how much water you add. Mine turned out more like a stew.  My husband really liked it, much more than I did, but he's a big miso fan. The millet is an interesting textural addition.  Next time, I may add some more vegetables.
