Cauliflower with Onions

What you need: 

1 medium to large head cauliflower, cut into 1" pieces
water, for steaming (2/3 cup reserved)
4 tablespoons olive oil
1 medium onion, thinly sliced
5 cloves garlic, chopped
1/2 teaspoon red pepper flakes
1 teaspoon dried oregano
salt, to taste
1/2 cup apple cider vinegar

What you do: 

1. Place chopped cauliflower on to steam. Remove from heat when it begins to soften ( Pre-al dente). Save 2/3 cup of the water cauliflower steamed in.
2. While cauliflower steams, heat olive oil in a wok or large fry pan over medium-hi heat. Saute onions until at least half of them are black. Add red pepper flakes and garlic, continue stirring 1 more minute.
3. Add cauliflower and water saved from steaming. Toss and continue cooking over medium-hi heat. Add oregano and salt, to taste. After 2 or 3 minutes, add apple cider vinegar and continue stirring. Cauliflower should be sitting in abundant dark liquid.
Serve with bread.
Source of recipe: I made this up on a recent visit to my Mom's house. We ate it and were both ecstatic. Thought others might like to try it.
