Cauliflower Poppers

What you need: 

1 large head cauliflower, chopped to florets
juice of 1 lemon
3 cloves garlic, minced
2 teaspoons Dijon mustard
1 tablespoon olive oil
1 teaspoon salt
1 teaspoon dried dill
fresh black pepper, to taste
2 tablespoons nutritional yeast

What you do: 

1. Preheat oven to 400 degrees F. Whisk together the remaining ingredients.
2. Toss with the cauliflower.
3. Bake for 40 minutes, stirring once about halfway through the cooking time.
They're ready when they get nicely browned and they're tender but not mushy. I like to leave mine in until they get chewy blackened parts, but that's just me.
These are soooo good - sometimes when I want a light dinner I'll just make a batch and eat it all myself, easily as good as French fries!

these are sooo good.
i made some changes, but nothing too major.
i like to enjoy the whole head of cauliflower for dinner if i make these.

its just as good if you just coat a sheet pan lightly with olive oil - and roast the califlower for about 25 minutes with just salt n pepper ....

i like cauliflower now! i thought cauliflower was a yucky vegetable but i decided to give this recipe a try... glad i did. im not very fond of dill so i omitted it from the recipe. mine came out a bit too sour though, maybe i used a little too much dijon. i baked them for a little less than a half an hour, this allowed them to maintain some of their crunch, which i really enjoyed. i will definitely make this again.

This is an easy way to spice up cauliflower! It was really good and uses ingredients that I keep on hand; I will be making it often!

These were fantastic & gone in about 2 min at our dinner party....they stuck to my pan so when I tried to stir them at 20 min I ended up breaking them into smaller pieces.  Not a huge deal but I will remember to oil the pan slightly next time :)

These were fantastic!!  They had so much flavour and I just couldn't stop eating them :)  Definitely added to my normal repertoire of recipes :)

This was super!  Much better than I anticipated.  Usually I like my veggies plain with maybe a little salt, but this really took it up a notch!  I omitted the dill because sometimes I think dill can overpower a recipe...  The mustard flavor really came through...  I will make this again  :)

This was a great and very easy snack.  We added some red pepper flakes for a little added kick.
We substitued regular mustard for the Dijon. 
The husband wasn't expecting much but he's already asking for more.  Thanks, for the great recipe!

this was YUMMY. everyone gobbled it up. i made a couple of substitutions: toasted breadcrumbs for the yeast, & i added a tablespoon of vegan italian dressing to some regular mustard because i didn't have dijon. good stuff! thanx! ;D
