3 cups texture soy protein
3/4 cup lime juice
1 1/2 cup V8 juice
finely chopped cilantro
finely chopped fresh jalapeno peppers
vegan mayonnaise (Vegenaise)
hot sauce (optional)
Cook texture soy protein (I boil it in hot water but you may soak) and drain.
Combine soy protein, lime juice, V8, onion, tomatoes, cucumber, cilantro, jalapeno and carrots. Add salt to taste and mix well.
You may use as much or as little veggies as you like. I don't measure my ingredients so I'm not sure about the measurements above. It is supposed to have a lot of lemon. If you are familiar with original ceviche you know what I'm talking about.
You may serve immediately or let it sit. Letting it sit for a few hours will enhance the flavor.
Spread Vegenaise over a tostada and spoon the desire amount of ceviche on top. You may add avocados and hot sauce on top of each tostada.
