4 medium potatoes
1 bunch scallions, white part only
3 tablespoons olive oil or vegan margarine
2 cups Dragonfly's uncheese (http://vegweb.com/index.php?topic=7126.0), optional
salt and pepper, to taste
1. Boil potatoes or microwave until tender. When cool, peel and mash.
2. While potatoes cook, slit scallions longwise twice, so as to separate the stalk into quarters, and chop small. Sauté in oil or margarine.
3. Add to mashed potatoes and blend well, seasoning well with fresh-ground pepper and salt.
4. Optionally, top the champ with the Uncheese; you can also slide it under the grill to brown.
This is a traditional Scottish dish served at New Year and Halloween. Put some vegan sausage with it and you've got a delicious meal.
