Chana Masala

What you need:

2 tablespoons vegetable oil
1 medium onion, chopped
1 large clove garlic, minced
1 tablespoon curry
1 tablespoon tomato paste (I used ketchup, how embarrassing)
1 (15 ounce) can chickpeas, drained, reserving 3 tablespoons liquid
1/2 tablespoon lemon juice
1/2 teaspoon salt
fresh black pepper, to taste
crushed red pepper, to taste, optional
1 tablespoon vegan margarine

What you do:

1. Heat oil on medium high heat. Fry onions until slightly browned. Reduce heat to medium. Add garlic, curry, and paste. Stir and simmer about 2 minutes.
2. Add chickpeas, reserved liquid, lemon juice, salt, and black pepper. Simmer 5-6 minutes, stirring occasionally.
3. Add red pepper, to taste. Add margarine, stirring through to melt it. Stir and simmer for 5 minutes more or until chickpeas are softened and dish is hot. Serve over rice.
Source of recipe: I don't know how authentic this is, but I whipped it up last night. It tasted great to me.

This is so simple and yummy. It's a great basic recipe. Just add a touch of fresh coconut milk, extra tomato paste, more chili, top on rice and your in heaven.

I have to admit: I'm not vegan, not even vegetarian, but this website has such AMAZING recipes and I love to try them!!! Also I live in the Czech Republic and you can only eat "meat & dumplings" for so long... This has become one of my go-to recipes. I did add coconut milk as some have suggested as well as some peas and green onion. Thanks!

Thank you for this one - it was great!  I was out of lemons and omitted the lemon juice, and it turned out fine.  My husband and I both loved it and he told me "I could make it again" which is a huge compliment from him!

This was INCREDIBLE! I LOVE Indian food, and this was definitely the best version of chana masala I've ever been able to make at home! We made an Indian version of tacos with Chapatis, some yellow lentil dal, chana masala and veggies! So good! Thank you for this recipe!

I left out the red pepper, but otherwise followed the recipe exactly. It was tasty and simple, made of ingredients that I almost always have on hand. Thanks!

I LOVED this! I've made it like 5 times already. Like others, I add extra tomato paste and coconut milk. It's fabulous <3
