Chana Masala

What you need: 

2 tablespoons vegetable oil
1 medium onion, chopped
1 large clove garlic, minced
1 tablespoon curry
1 tablespoon tomato paste (I used ketchup, how embarrassing)
1 (15 ounce) can chickpeas, drained, reserving 3 tablespoons liquid
1/2 tablespoon lemon juice
1/2 teaspoon salt
fresh black pepper, to taste
crushed red pepper, to taste, optional
1 tablespoon vegan margarine

What you do: 

1. Heat oil on medium high heat. Fry onions until slightly browned. Reduce heat to medium. Add garlic, curry, and paste. Stir and simmer about 2 minutes.
2. Add chickpeas, reserved liquid, lemon juice, salt, and black pepper. Simmer 5-6 minutes, stirring occasionally.
3. Add red pepper, to taste. Add margarine, stirring through to melt it. Stir and simmer for 5 minutes more or until chickpeas are softened and dish is hot. Serve over rice.
Source of recipe: I don't know how authentic this is, but I whipped it up last night. It tasted great to me.

SO HOW'D IT GO?

;)b so quick and delicious. Everyone's going bonkers about how good the kitchen smells. I kicked it up with a bit of sriracha sauce instead of the flakes. Sofa-king good.

Super delicious, quick and easy to prepare.  This is a great "go to" dish that you can make at the last moment with ingredients that are likely already in your pantry.  Thanks so much for posting this!

Made this again last night, and again, it was Amazing!

It is on my list of "regulars" I make now.  I have 10 recipes that I make on a regular basis and this is one of them now.  I make it once ever two weeks.  I think I am turning my son onto beans, as I am making a lot more stuff with beans now to cut my grocery cost and he ate it all, chickpeas and all last night.  I was amazed and glad, chickpeas are so healthy.

I was leary of tryng this as I don't like Indian food normally and I am not crazy about Chickpeas,  but it got so many good reviews that I thought that I would bite the bullet and give it a try.

I was amazed, this was VERY good.  Very pleasantly supprized.  I did change the recipe a bit, I didn't add any hot sauce or red pepper flakes as I don't really like things spicy, nor does my son, and I only added about a half of a tsp of curry.  I like curry but only when it is very mild.  I used tomato paste and lemon juice as the recipe called for, but at the very end when it was done I turned off the heat, and then added a half of a can of coconut milk.  It was good before but the coconut milk made it amazing  :D.  Wow.

Unfortunatly my 18 month son wasn't too thrilled with it, he hates beans, beans of any sort, and chickpeas especially.  I am trying to convert him and did manage to get him to eat a couple of little peas, but mostly he ate just rice with sauce.  I ate everything and loved it.

so I made this twice in a week haha

Last night I made it adding some carrots, scallions, and mushrooms.

I fried up the mushrooms with the onion... added the carrots shortly after, then the other stuff with the scallions.  Used a teeny bit more tomato paste to compensate for the abundance of other ingredients, poured some more Frank's Red Hot and crushed red pepper in there.  SO GOOD...

I served it on a bed of massaged kale and extra long grain brown rice.  holy shnikies!

This was super yum!  It's super super easy and cheap to make and it made the house smell wonderful.  My omnivore dad (who is also a wannabe chef!) was really impressed by it, which is hard to do! Since it was my first time making it I wanted to follow the recipe pretty much exact to get an idea of what it tasted like before making any modifications... the recipe is GREAT the way it is, but my dad and I thought it might look pretty and taste good with either some green onions or perhaps some cilantro.  So I will be trying both of those out the next couple times I make it.  I think I'd also love to throw in some chunks of fresh tomato and maybe fry up some mushrooms with the onion!

I will also double the batch next time, too, so that I can eat this all week because I love it that much  :)>>>

I had some left over angel hair pasta from something else I made and was curious how that might taste with this...it was good but didn't work as nicely as the brown rice, so I'll stick to serving it with brown rice :)

Besides how awesomely delicious this tastes and smells, like I said it's so cheap to make!!  yay! thank you so much for this recipe this is DEFINITELY a new favorite!

I wanted to add that I did add some crushed red pepper and some Frank's red hot :) so I guess I did make some minor modifications

pretty tasty. added 1/2 tablespoon coconut milk, and tofu. yum!

I misread the recipe and used a whole can of tomato paste  :-[

It turned out edible, actually.
After I realized what I did, I just went with it and made it into like a garbanzo spaghetti type thing.
My fiancee and his mom loved it, but I felt so silly.

But who knew spaghetti and curry could work together so well?
Bahahahaha.

I'll make this again when I have a better attention span xD
