Chard Wraps

What you need: 

5-6 chard leaves (big leaves are the best)
1/2 cup hummus, divided
1/4 cup cherry or grape tomatoes, diced
2 carrots, grated
1 bunch scallions, sliced; white parts only
1/4 cup basil leaves
1/4 cup dried cranberries

What you do: 

1. Wash and pat dry chard and flatten out on plate with the top side of the leaf facing up. Spread about 1 tablespoon hummus onto each chard leaf, and divide diced tomatoes, grated carrots, scallions, and basil leaves among each roll. Sprinkle on some dried cranberries.
2. Cut the stiff part of the stem off (I cut almost all of it off) and lift the rest of the stem up and lightly press onto the top of the mix.
3. Fold one side over, fold other side over until they're overlapped and tuck the top of the leaf under the chard and roll over.
Eat and enjoy!
