Cheaters Chili

What you need: 

1 cup brown rice
1 can beans of choice (kidney beans, black beans, etc)
1 cup salsa (a good chunky kind works best)or more to taste.

What you do: 

Prepare rice acording to package directions. When rice is cooked, add beans (no nead to drain them) and mix well. Continue to cook on low heat. Add salsa. Mix well and heat through.
No fat, quick, easy and cheap.

SO HOW'D IT GO?

This was really, really good. It was way too easy to be that good, in fact. I sprinkled mine with cilantro. Yum!!!

I used black beans. My salsa itself is too bland, so I did add a few things to this "recipe" (it's so easy and versatile, I hesitate to call it that!). I added onion, garlic, red bell pepper, some zucchini (left over from minestrone, haha), and a few fresh baby spinach leaves, with some hot spices. Also added a little extra salsa to make it not as dense.

Yummy!  :)>>> I love just how SIMPLE this recipe is, and it's surprisingly quite tasty!! Haha, yeah it does look like a "Mexican glop," but it's a good glop! My grandmother loved it, too. I'll definitely be making this again and tweaking the recipe to fit whatever I currently have on hand. So easy!  =)

I make this all the time. It's one of my stand by recipes because I always have what it needs. I know add green and red peppers, onions and garnish with some green onions.

Delicious! My didn't really have the consistency of chili but still tasted good. I used black beans and a little over a cup of salsa. Served with the grandmas cornbread also a recipe on vegweb. Yummy!
