Cheddar Broccoli Soup

What you need: 

2 cups water
1/2 cup nutritional yeast
1/2 cup flour
2 teaspoons salt
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
2 1/2 tablespoons vegan butter
1/2 cup nondairy milk, add more if too thick
1/2 head broccoli, steamed and cut

What you do: 

1. Add all ingredients except the steamed broccoli together in a medium pot.
2. Heat until thick, and slightly boiling.
3. Add broccoli, and season to your liking.

SO HOW'D IT GO?

I think I'm gonna do this up tonight but I was wondering: is it okay to use regular soy milk? I don't have any unsweetened; I just don't want to end up with a sweet cheese and broccoli soup...ick!

I've made this several times now and this is a perfect soup base. Although its great the way it is, I think it adds a lot more flavor when using vegetable stock instead of water. I've added brocolli and other times I've also thrown in other veggies and it always turns out great and AMAZINGLY simple. Perfect for a simple, fast yet delish meal.

I made this yesterday and it was so delicious! I'm actually eating leftovers as I type this - it's even better the next day! I added a whole lot more garlic and dash more onion. I also put in about 2 tsps sweet basil - SO WONDERFUL! This is a great sick day soup especially since it's so simple to make and mess around with ingredients.  ;)b

This was good! I didn't have soymilk, so I used 3 cups of water and boiled it with the nut. yeast, seasonings, butter, broccoli, a small potato, and two carrots. Then added the flour. Reminded me of a pot pie filling, I may try that! Also, I thought that 2 tsp of salt would be too much, so I used 1 tsp and was going to add more to taste, but it didn't need more, IMO.

Made this last night....it was soooooo delish!!! Took it to a meat-eater friend who had surgery yesterday. He loved it!  ;)b

I made this last week and it was really good. I found that I had to add more soy milk, but that could be because I might have used a bit more broccoli than called for.... oops! It still turned out delish! Thanks for sharing!

This was delicious!  I added some diced onion, cayenne pepper and about 1/4 block of FYH Cheddar.  I ended up using a whole head of broccoli and 1 cup of soy milk.  I didn't have any leftovers so next time I'll probably double the recipe.
