Cheese Sauce

What you need: 

1/4 cup nutritional yeast
1/4 cup flour
1 cup water
2 tablespoon margarine
1 tablespoon or more cajun spice (mine is homemade using Prudohommes recipe)
1t. or more tabasco sauce or other pepper sauce
1T. Dried mustard

What you do: 

This recipe is based on the nacho recipe on these pages and is taken a bit further.
Whisk yeast, flour, and water in a saucepan over medium high heat until it gets thick and bubbly. Remove from heat and add 2 margarine, whisking in till it is melted. Add cajun seasoning, tabasco, and dried mustard. I serve this over pasta for mac and cheese, or over pasta.

SO HOW'D IT GO?

This was pretty good.  But I must say that it doesnt really taste a whole lot like cheese.  Mine ended up tasking kinda like a watered down grey poupon.  Even though I didnt add any mustard. 

But all and all it was pretty tasty....I think that I will use it as a dip....I might try adding some home made salsa to it.  That way it will be good on chips....

this was great on my brussel sprouts! and really easy too.. i dumped a ton of garlic and onion powder in along with the cajun spice.. and i used dijon mustard. the only thing i found with the cajun spice was it made it a little.. grainy? next time i might just use a bit more tobasco and omit the cajun spice all together. but oh so good!
