Cheesy Broccoli Rice Casserole

What you need: 

1/2 cup water
1 stalk broccoli, broken into florets
1 medium onion, diced
3 cups cooked brown rice
1 (10 ounce) can vegan cream of mushroom soup or other creamed soup
salt and pepper, to taste
1 (8 ounce) package or 1 cup grated vegan cheddar cheese

What you do: 

1. Preheat oven to 350 degrees F and grease a casserole dish. In medium sized pan, pour in 1/2 cup water and add broccoli and onion.
2. Simmer over medium heat until broccoli is just slightly soft. Save water. In a prepared casserole dish, add cooked rice, broccoli, onions, and their water along with cream of mushroom soup.
3. Mix well. May need to add more water if mixture is too thick. Add salt and pepper, to taste. Sprinkle grated cheese on top.
4. Put in oven and bake for about 20-25 minutes, or until knife goes through dish and comes out clean.
This is unbelievably delicious.

SO HOW'D IT GO?

I haven't made this specific recipe; but I've used Awesome Mushroom Gravy http://vegweb.com/index.php?topic=27548.0 to veganize other things that call for cream of 'shroom soup... I make it a day or so before, & double it; then eat half or so in a 'gravy' incarnation (on potatoes or whatever) & reserve about a 1-1/2 to 1-3/4 cup, to sub for cream of mushroom soup in other recipes... hope that's helpful! let us know if you find something that works well for this dish.  :)

Anything to substitute for the cream of mushroom soup? can't find any that's vegan, no mushroom broth around either

I love broccoli, so I doubled the amount in the recipe.  I might agree with those who described this recipe as a bit bland.  I added A LOT of black pepper and a tad of sour cream.  It probably still needed more salt even with a very salty cream of mushroom soup.  I still loved it... but mainly because I always love the taste of broccoli.  I will probably make this again, simply because the ingredients are so easy to have on hand.  Next time, I'll need to add more salt and maybe even more black pepper.  If you're debating making this... it's worth trying.

I added fresh garlic to this, but should've added more seasoning since, except for the cheesy parts, it was a little bland. Recipe is good and easy to modify by using asparagus & carrots, or adding mushrooms or celery.

this recipe is really yummy. i make it all the time. i don't put in the onion, though, and i use brown rice and add corn and peas most of the time.

yeah, i made this recipe and it was really bland. in the original "chicken divan" recipes it has you add mayo to the mushroom soup. i might try that next time. i even made a cheese and bread crumb topping for this. that was the best part.

Has anyone ever tried making this with nutritional yeast instead of the shredded vegan cheddar?  I've never found a vegan cheese that I've liked.

Oh my..... my kids loved this. At first they refused to even try it because they thought it looked bad. But, they tried and had seconds! I did not precook the broccoli, I just covered the casserole and baked it for about 45 minutes to and hour. I used creamy portabella mushroom soup from a box (it was vegan), then I added a couple spoons of better than sour cream. I only had a small portion of vegan cheddar (not even 4 oz, so I add a couple tablespoons of nutritional yeast. I also added a few cloves of garlic because I just feel wrong cooking without it. Thanks, great recipe.

So delicious, quick and easy to make! I actually blended corn & (soy)milk for the "soup" to add another flavor and used barley instead of brown rice. Really good for those times when you need a quick, healthy dinner!
