Cheesy Chickpea Sandwich Spread

What you need: 

1/2 package vegan monterey jack cheese (Follow Your Heart Monterey Jack Cheese)
1 can chickpeas, well drained (I like Bush's)
1/4 teaspoon both garlic and onion powder (approx...I just shake a few times)
1-2 tablespoons water
1/2 small onion, diced
salt and pepper
big handful spinach, chopped
8-10 cherry tomatoes, chunked

What you do: 

Put onion, water & cheese into a small saucepan. Cook on medium heat until cheese is melted. Remove from heat and add chickpeas. Mash with a potato masher until just lumpy. Add everything else and stir. You can eat warm or put in fridge to cool. Spread on bread with you favorite toppings. It is great with Vegenaise and onion...YUM!!!
If you don't love it I at least hope you don't hate it. :D

Well, I do like crunchy onions. ..but to each their own.  Crunchy onions and tomatoes lend to a fresh taste.  Where as cooked onions and pasta sauce is something different entirely.  We are all individuals. ..

This was an interesting recipe. I did need to tweak it a bit because it was not very yummy before. If you don't like crunchy onions I recommend cooking the onions longer before adding the cheese. I added more salt than the recipe called for. I also added more water and since I didn't have tomatoes I added some regular pasta sauce to it to give it the moisture it needed to stay together. I put it together on a sandwich with a garlicy parmesean mayo and top my sandwich with sweet peppers and mushrooms.
