"Cheesy" Potato Pancake

What you need: 

Oil or vegan margarine
1 onion, chopped
1 potato, grated
3 ounces vegan cream cheese
Salt and pepper, to taste
Grated vegan cheese, to garnish (optional)

What you do: 

1) In a hot, skillet, fry onions in oil until translucent.
2) In a medium size bowl, stir together the onion, potato, and 'cream cheese' until cream cheese is completely mixed in. Heat oil or margarine in a small size skillet. The diameter of the skillet determines the diameter and thickness of the pancake, for a thinner pancake use a larger skillet, and cook for less time to ensure it doesn't burn.
3) When hot, add potato mixture and pat down firmly. With a flat flipper/spatula tool lift sides of pancake to check for burning. When browned, flip over. If the pancake doesn't stay together yet and breaks apart for the first slip, have no fear. It will retain shape after more cooking. Continue cooking and flip when ready.
4) If a truly cheesy pancake is desired, when cooked flip pancake onto plate and top with 'cheese' shavings and broil in an oven until 'cheese' has melted. Enjoy!
Feel free to add anything you like to the pancake, this is just a basic recipe, try anything you like!
