Cherry Velvet Limeade Mocktail

What you need: 

1 cup freshly squeezed lime juice
1 cup raw agave
2 cups fresh or frozen pitted cherries
1 whole lime with skin on, chopped roughly
4 to 6 cups sparkling water
mint leaves, for garnish
lime wedges, for garnish
ginger juice, to taste (optional)

What you do: 

1. In a saucepan, place the lime juice and agave; stir on a low heat until agave is fully dissolved – about 1 minute. Allow this syrup to cool.
2. In a blender, place the lime-agave syrup, cherries, and whole lime; puree until nice and frothy.
3. Transfer to a glass jug and pour in the desired amount of sparkling water.
4. Garnish with mint leaves and lime wedges. You could add a squeeze of fresh ginger juice for an added zing. YUM!
