Chewy Oatmeal Bars

What you need: 

3/4 cup organic brown sugar
1/2 cup organic sugar
8 oz natural apple sauce
2 tablespoons vegetable oil
6 tablespoons organic apple juice
2 teaspoon pure vanilla extract
1/2 cup unbleached flour
1 teaspoon baking soda
1 teaspoon cinnamon
3 cups uncooked oatmeal
your choice of :
1/2 cup raisins, 1/2 cup carob chips, and 1/2 cup almonds or
1 cup raisins and 1/2 cup carob chips or
1 cup dried cranberries and 1/2 cup walnuts

What you do: 

Preheat oven to 350. In a large bowl, combine vegan sugars, applesauce, oil, apple juice, and vanilla. Mix well.
In a medium bowl mix flour, baking soda, cinnamon, and oatmeal and any combination of fruits, nuts, and carob listed above or make up your own combination.
Add dry ingredients to large bowl of wet ingredients. Mix well. Press evenly into a 9x13 ungreased glass casserole dish and bake for 25-30 min until golden brown. Cool on wire rack, and do not cut until completely cooled.
