Chickpea and Onion Sandwich

What you need: 

1 can chick peas
1 medium sized onion
mustard to taste
Relish to taste - optional (makes it sweeter)
2 slices bread ( Rye is great with this)

What you do: 

Cut up onion into small pieces Throw everything together in bowl Mash up chick peas, onion, mustard, relish with fork Put on vegan bread

SO HOW'D IT GO?

Super good! I added in the relish which is a nice touch, along with grated carrot and lots of black pepper. 1/2 onion was plenty for a 15oz can of chickpeas, and I like raw onion.
