Chickpea Avocado Salad

What you need: 

1 ripe avocado
1 (15-ounce) can chickpeas, rinsed and drained
1 yellow or orange bell pepper, diced
1/2 red onion, diced
1/4 cup banana peppers
2 tablespoons apple cider vinegar
salt, to taste
pepper, to taste
vegan bacon bits

What you do: 

1. Slice the avocado into medium-sized chunks.
2. In a bowl, combine the avocado, chickpeas, bell pepper, and banana peppers.
3. Add the apple cider vinegar, salt, and pepper. Top with the imitation bacon bits.

SO HOW'D IT GO?

very tasty! i left the vegan bacon bits out bc those tend to get soggy but very good without them!  ;)b

This is a really easy and awesome dish to make.  Great to throw in a container and take on a picnic.  After a day or so it can look kinda gross when the avocado goes brown, but it's still super tasty!  Good with crackers or chips.
