Chickpea Salad Sandwich
2 slices whole wheat bread
chickpeas
mustard
soy mayonnaise
pickle relish
vegan soy cheese, optional
lettuce, optional- i like the spring greens mix
tomato slices, optional
fresh ground pepper
When I became vegetarian, i missed the weirdest things, and one of those things was chicken and tuna salad sandwiches. This is a good substitute, because with the mustard, mayonnaise, and relish, you can hardly tell what the main ingredient is anyway. Non-vegetarians will like it too!
Put the chickpeas, mustard, mayonnaise, and pickle relish (or whatever you would typically make meat salads with) in a bowl and mash with a fork into a lumpy consistency (should have texture, not smooth like hummous). Put cheese on one slice of vegan bread spoon chickpea salad over it. Top with lettuce and tomato slices and add pepper to taste. Put other slice of bread on top to close sandwich and slice in half from corner to corner. Yummy... enjoy! ;)

i cooked my chickpeas from scratch and accidentally burnt a few on the bottom of the pan.. it just added a a lttle smoky flavor so it was a good accident. :)
a great recipe in it's simplicity. with some fresh bread, lettuce, and tomato from the farmer's market, this one is definitely one to keep around as a regular.
This is such a great idea! I used Dijon mustard, a little bit of mayo, some sweet pickle relish, chopped celery and chopped carrot. I think next time I'll shred the carrot. I used to love chicken salad sandwiches..so this is a nice substitute. Thanks! :)
This was fantastic! I cannot believe I never thought to make it! I replaced the pickle relish with chooped celery... I've never been a pickle fan, so my mom used to make tuna salad with celery instead to please her picky children haha. Since I've gone veg I've been craving the weirdest things, like tuna, or chicken salad... and I never even liked it that much when I wasn't veggie haha! But this my friend... was better than any tuna/chicken salad I've ever tasted in my life! I will be making this A LOT! :D

This recipe was sort of a disaster. Most of it was my fault. Hey--it was delicious anyhow.
I used Great Harvest honey whole wheat, and it was sort of dense (and I didn't cut it big enough), so basically my whole sandwich kept popping out the sides when I was eating it. Using a fork (and fingers as backup), it worked out fine...
Recipe note: yes, as mentioned, a potato masher makes quick work of the mashing. Also, a little bit of lemon added to the chickpeas wouldn't be bad at all. Feel free to add a little water if the chickpeas are on the dry side. I put cheese, but felt it wasn't necessary--with the veganaise/ nayonaise, you can't really taste the cheese at all.

I decided to add guacamole, red bell pepper and soy swiss cheese to this sandwhich. It was by far the best "salad" sandwhich I've had ever- meat or otherwise!
Sounds delish - could you use other beans? Would the flavour or texture be different?
I have used northern beans for this and it was good, I do prefer the chickpeas

This recipe is simply amazing! I missed the chicken-salad sandwich so much and when I ran across this recipe here on vegweb, it was like a dream come true. I ran out and got mustard, tried the recipe, and found it to be delicious. I omitted the pickle relish as I don't like relish. Next time- garlic and celery in the chickpea mixture!
