Chikin Nuggets
1 cup textured soy protein
1 cup water
3 tablespoon vegan powdered chicken flavor/stock
2 teaspoon xanthan gum
3 tablespoon corn meal
3 tablespoon nutritional yeast
Pour textured soy protein into small bowl. Add the vegan chicken flavor to the water and stir until dissolved. When dissolved add water to textured soy protein, stir and let stand 10 minutes. Add Xanthan Gum to the rehydrated textured soy protein stir until well mixed. Let stand about 2 minutes and stir again. Mixture should look a little sticky. Pour cornmeal and yeast onto plate and mix together. Take teaspoons sizes of the textured soy protein and flatten into nuggets on the cornmeal and coat both sides. Put onto baking sheet that has been sprayed with oil and bake at 350 for 15 minutes. Turn over and bake another 15 minutes. I usually make 12 nuggets and 2 patties, for sandwiches. My kids love them.
SO HOW'D IT GO?

Just made these for dinner, they were ok but not great. Tasted best with ketchup. I seasoned the yeast/cornmeal mixture like I would fried chicken, with lots of paprika and pepper and seasoned salt, but it turns out I should have seasoned the TVP instead. Edible, might experiment a bit more, but not great as written.
i cooked the tvp in the microwave and blended it in a food processor with vegan mayo, water, and flour to try to make it stay together which it still didn't. then i breaded them in a mixture of breadcrumbs, flour, salt, pepper, paprika, and garlic powder and attempted to fry them. they didn't stay together and the texture was awful but it tasted okay. with the three nuggets i have left, i'm attempting to bake them right now and so far they're really gooey. they're edible but the texture is horrible. i'll probably never make these agan but thanks for the general idea.
sorry :-\
