Chili-Style Black Eyed Peas

What you need: 

2 cups dried black eyed peas
4 cups water
2 cups chopped tomatoes
1 cup onion
1 cup celery
1-2 tablespoon chili powder
2 bay leaves
1 cup raw brown rice

What you do: 

Soak peas overnight. Do not drain. Add all ingredients except rice, simmer 1 1/4 hours, add rice. Simmer until rice is tender. Serve with opt. vegan cornbread and greens.
