Chipotle Chickpea Salad

What you need: 

1 (15-ounce) can chickpeas, rinsed and drained
1 tomato, chopped
1 avocado, chopped
1 green onion, chopped
1 to 2 teaspoons chipotle spice blend, to taste *
1 to 2 tablespoons lime juice, to taste
1 tablespoon olive oil

What you do: 

1. In a bowl, combine chickpeas, tomato, avocado, and green onion.
2. Dressing: In another bowl, whisk together chipotle spice blend, lime juice, and oil.
3. Pour dressing over the bean mixture; stir gently to coat. Serve immediately or refrigerate for later use. Good served over spinach or rice.
* I use a chipotle spice mix that includes chipotle powder, smoked paprika, and dried red pepper. It is smoky tasting and not overly spicy.

SO HOW'D IT GO?

The lime juice helps to keep the avocado from going brown.  I have kept it in the fridge for two days...it never lasts longer than that because I eat it up!

Ooh, this sounds delicious! Does it save well? I know that avocado tends to go brown quickly...
