Choco-Banana Ice Cream

What you need: 

1 banana, peeled, sliced into rounds, then frozen
2 tablespoons yacon or agave or maple (not raw), to taste
2 heaping teaspoons cocao or cocoa powder

What you do: 

1. In a blender or food processor, place frozen banana slices, yacon syrup, cocao (or you could skip this and add one half vanilla bean, scraped, then include husk); process until smooth, scraping the sides a few times while blending.
2. Pour into a large container, place in freezer, and stir every 30 minutes or so until totally frozen and ice cream like. (It will freeze pretty hard, so you'll want to leave it out 5 minutes before eating (unless you are testing it every time you stir like me.) Top with your favorite goodies! Enjoy!

SO HOW'D IT GO?

This is yummy and easy. I used one banana, a tablespoon of cocoa powder, and a teaspoon of agave nectar. I didn't freeze it and ate it just as soft serve. I used my food processor. Topped with shredded coconut. Very easy and healthy!
