Chocolate-Banana Muffins (Gluten-Free, Fat-Free Soy Free)

What you need: 

1 1/2 cups gluten-free flour blend (
2 teaspoons baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1/4 cup cocoa
1/2 cup sucunat
1/4 cup maple syrup
3/4 cup mashed banana
1/4 cup applesauce
1 teaspoon vanilla extract
vegan chocolate chips, optional

What you do: 

1. Preheat oven to 350 degrees F. Combine flour, baking powder, baking soda, salt, and cocoa in a medium bowl.
2. Combine remaining ingredients in another bowl. Combine wet into dry, mix until just combine, then mix in chocolate if desired.
3. Spoon mixture into paper lined muffin tins. Bake for 26 minutes or until a toothpick comes out clean.
