Chocolate Cake

What you need: 

2 cups brown sugar
1-3/4 cups whole wheat flour
3/4 cup cocoa powder
1-1/2 teaspoon baking soda
1 teaspoon salt
1 cup nondairy milk
1/2 cup vegetable oil
2 teaspoons vanilla extract
1 cup boiling water

What you do: 

1. In a bowl, combine dry ingredients (brown sugar, flour, cocoa powder, baking soda, and salt).
2. Add milk, oil, vanilla; beat for 2 minutes.
3. Stir in boiling water.
4. Pour into 9" x 9" greased cake pan.
5. Bake in a 350 degrees F oven for 35 to 40 minutes.

SO HOW'D IT GO?

Absolutely lovely!!
I paired this cake with a vegan recipe for chocolate peanut butter frosting, and it was terrific---I don't think I've ever had a better chocolate fix!
