Chocolate Chip Cookies-Like They Should Be

What you need: 

3/4 cup raw sugar
3/4 cup brown sugar
1 cup vegan margarine
1 teaspoon vanilla
1/4-1/3 cup applesauce (enough to equal 1 egg)
2 1/4 cups flour
1 teaspoon baking soda
1 teaspoon salt
1 (12 ounce) bag vegan semi-sweet chocolate chips

What you do: 

1. Heat oven to 370 degrees Fahrenheit. Beat sugars, margarine, vanilla, and applesauce together in a large bowl.
3. Stir in flour, baking soda, and salt. (Dough will be somewhat stiff). Stir in chocolate chips.
3. Drop by rounded teaspoonfuls onto a cookie sheet. Bake for 10-15 minutes, or until light brown. Cool.
This is a recipe that my mom has been making my entire life, and I was so so so excited that they turned out so well after substituting a few things.

SO HOW'D IT GO?

This is the perfect recipe. The cookies are soft and not crunch. I noticed that this recipe added applesauce, is this a new idea? I liked the end result, these are my new favorite cookies!

"like they should be" - i agree. i just made a batch using apricot applesauce, orange zest, dried cranberries, and choc chips. very fruity!

has anyone tried these with a gluten free flour mixture? or is there a soy-free non-dairy butter spread that's not pure shortening? I'm trying to see if I am allergic to soy and I LIVE ON EARTH BALANCE--the stuff is scrumptious....But just in case its causing me problems, I need a non hydrogenated margarine alternative  to eat these cookies >:D

I know its been a while since you posted this, but I just saw a soy-free Earth Balance at the Earth Fare where my mother lives.  I'm not sure how widely available it is though.

This recipe is CRAZY good...  Vegans and non LOVE it! :)>>>  I do use 2T of peanut butter and cut back on the margarine by 1/4 c.  Also I put the oven temp at 350, because any higher in my oven makes the bottoms of the cookies too brown.  It also helps the shape of the cookies if you chill the dough for 5 minutes before putting on the cookie sheet.  I have made this recipe a million times and it ALWAYS comes out perfect.  It is great for bake sales for my son's school because EVERYONE loooves them.

There aren't non-vegan choc chip cookies that are this EASY to make! I can't believe how easy... I was skeptical but they came out great!  ;)b
