Chocolate Chip Cookies-Like They Should Be

What you need: 

3/4 cup raw sugar
3/4 cup brown sugar
1 cup vegan margarine
1 teaspoon vanilla
1/4-1/3 cup applesauce (enough to equal 1 egg)
2 1/4 cups flour
1 teaspoon baking soda
1 teaspoon salt
1 (12 ounce) bag vegan semi-sweet chocolate chips

What you do: 

1. Heat oven to 370 degrees Fahrenheit. Beat sugars, margarine, vanilla, and applesauce together in a large bowl.
3. Stir in flour, baking soda, and salt. (Dough will be somewhat stiff). Stir in chocolate chips.
3. Drop by rounded teaspoonfuls onto a cookie sheet. Bake for 10-15 minutes, or until light brown. Cool.
This is a recipe that my mom has been making my entire life, and I was so so so excited that they turned out so well after substituting a few things.

SO HOW'D IT GO?

oh my!  wonderful cookies...  i only added 1/2 c soybean marg. and upped the applesauce to 2/3...  so moist and chewy.  even when they start to brown they are far from crisp... so don't worry.

these were the absolute GREATEST cookies i have ever had. i'm gonna say probably because of all the margarine, but who cares! soooo worth it  ;D

I also used the 2/3 c. applesauce and 1/2 c. Earth Balance like many of you recommended, and they turned out perfect!  I made an 8-by-8 pan of bars as well as a couple dozen small cookies, and both are delicious and 100% indistinguishable from their non-vegan counterparts.  Next time I might add coconut or nuts if I have them.
This recipe is a keeper for me.  :)

These cookies are out of this world yummy!! :D After having a test cookie I quickly whipped up a second batch for the boyfriend to take to work. I know they'll love them as much as we do. This is now my chocolate chip recipe, for sure. As for substitutions, I used 2/3 cup applesauce and 1/2 cup vegan butter. Crispy on the outside, chewy on the inside - perfect!  :)

I omitted raw sugar and only added brown. i reduced the margarine significantly, although i dont remember the exact measurements. i dont like my cookies greasy! also i added flax seed for a nuttier flavour.

overall they were okay. crunchy on the outside, and chewy inside  ;)

These were great!  I am not a huge chocolate fan, so I omitted the chips, but they were nice and fluffy and mmmmm yum.

That is downright ILLEGAL!  :o

I used this recipe for my campus group's endeavor to bake 5,000 cookies and pass them out the first week of classes.  The only alteration I made was substitute half of the margarine for veggie shortening to give the cookies more structure and skimped on the applesauce (a little bit less 1/3)  The cookies turned out GREAT, and definitely lifted the spirits across all five campuses!

These cookies were SO AMAZING. I used brown sugar instead of raw, and vegetable shortening instead of the marge. I made them in the evening, and by the next morning when I woke up they were all gone!

Definitely my new favourite cookie recipe.  :)

A little more cakey then cookie but yummy!  I only had a little less than half a bag of chocolate chips (thought I had more when I started making them) so I threw in some shredded coconut to try and make up for it.  I brought a bunch into work this morning.  I'm not telling them they are vegan, I want to wait and see their reaction to the cookie first without any "eww they're vegan" prejudgement  :)

For better or worse, the amount of fat is probably correct.  Most of my Granny's best cookie recipes call for 2 sticks of butter, which equals 1 cup.  That's why I don't use her recipes anymore (sorry Granny!).
