Chocolate-Chip Oatmeal Nut Cookies

What you need: 

1/3 cup cashew butter, almond butter, or peanut butter
2 tablespoons canola oil
1 cup sugar or Sucanat (granulated cane juice)
1/3 cup nondairy milk (I use soy)
1 teaspoon pure vanilla extract
1 cup whole-wheat pastry flour or unbleached all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup rolled oats
1/2 cup vegan chocolate chips (try Sunspire brand)
1/2 cup chopped macadamia nuts or walnuts

What you do: 

1. Preheat oven to 425 degrees F. Oil a large baking sheet; set aside. Whisk together first five ingredients (through vanilla) until very smooth.
2. Add remaining ingredients, and stir to combine (be sure to mix in thoroughly the baking soda and salt; you may want to stir these into the flour first).
3. Drop batter by large spoonfuls onto prepared baking sheet. Bake for about 8 minutes, or until tops just begin to crack. Remove sheet from oven, and wait 10 minutes before transferring cookies to a plate or wire rack.
They are great for bake sales, to serve to skeptical meat-eating friends, or just as a reward for a week of hard work!

We love this recipe, i mean we just absolutly adore it, it was so rich in flavor and not just one but both of our carny husbands liked it too, not to mention my(veg bestie numero uno) dog Angelo. We found no need for oil, why add on extra fat you know because these days fat lurks everywhere, (veg bestie 2) i dont i eat anything i dont cook. We want more, more, MORE.  >:D :)>>>


These are in the oven right now and smell fabulous! I used butterscotch chips and walnuts and used half brown sugar. Can't wait, hurry up cookies!


Very Yummy :) I was looking for a recipe with little or no oil and this took care of it. Fast, simple, and the husband loved them. I used peanut butter, omitted the nuts because i didn`t have any and i baked them at 375 for 10 minutes. Perfectly chewy with slightly crisp edges. This is going in my recipe book. Thanks!


My word, are these sweet! I am a fan of sweetness, but I probably should have reduced the amount of sugar in these.  I did notice that they have less flour and oats than other oatmeal cookies, but not a whole lot less sugar.  They should have less sugar. 1/2 cup or
3/4 cup maybe. 

I used crunchy peanut butter and didn't add extra nuts, but I added about 1/2 cup of shredded coconut.  I think I could have added more coconut to be would be even better. 

I changed the temperature around a bit during baking, starting at 425 F and settling on 350 F and I baked them for 8 minutes.  I think they were fine. 

I got exactly 24 cookies out of this recipe, which was great.  Now I'll have to find some people to share them with me.  ;)b


I make these cookies every time I need to convince a non-vegan that vegan baking is delicious. They work every time. Five stars for these guys. I use almond butter and rice milk most times I make them, or chunky peanut butter and leave out the walnuts. Great recipe!


This recipe is awesome. Five stars!  I've made them twice so far using peanut butter both times (that's what I had hanging around).  The first time I used walnuts and the second time I used pecans.  I think the pecans were better.


I'm not much on chocolate, so I minus the chocolate chips. But I use coconut oil instead of regular oil and it was a hit.Gave it a really great taste.With nuts of course


i forgot to say i also added probably about a 1/2 tbsp of cinnamon... and they've really softened up since i baked them about 9 hours ago.  really soft and chewy, i'll definitely make them again.


these were awesome!  i baked at 375 for 8-10 minutes.  i subbed applesauce for oil, only used 3/4 cup sugar, crunchy pb (so i didn't add any more chopped nuts), mini chocolate chips and dried cranberries.  I took them out when they got a little brown on top but didn't look quite done. they are perfect. 

Also - a tip i learned from my friends mom is to let the cookies sit on a ripped open paper grocery bag after you take them off the cookie sheet instead of a cooling rack.  when they sit on the paper it allows some of the extra oil on the bottom of the cookie to absorb into the paper (and not into your thighs :)


These are great! I changed some stuff, though; I used only 1/2 cup of sugar, used peanut butter, chocolate chunks, and no nuts. I also baked them at 400 for 10 mins. and let them sit on the tray for 5 mins. but the insides were raw, so I put them in at 375 for 5 more minutes. I let them sit again and they were perfect! Not hard at all.  :)
