Chocolate Oatmeal Bombs

What you need: 

3 cups of oatmeal
1 cup of spelt flour
1 tablespoon of baking soda
1/2 teaspoon of nutmeg
1/2 teaspoon of cinnamon
1 cup of raw sugar
1/2 cup of cocoa powder
1 cup of mashed bananas
2 tablespoons of black strap molasses
1 teaspoon of pure vanilla extract
1/2 cup of raisins or walnuts (optional)

What you do: 

Combine the first five ingredients in a large mixing bowl.
In a separate bowl, combine the next five ingredients and add them to the dry mix.
Stir in the raisins and walnuts.
Roll into small balls (1/4" thickness) and place on greased cookie sheet.
Bake at 275 degrees for 20-25 minutes.

I made this recipe using whole wheat flour instead of spelt, agave syrup instead of sugar, and enjoy life chocolate chips instead of nuts.  I also used one mashed banana plus enough pureed beans to make 1 cup.  I think they turned out good, but I agree that chocolate needs fat to taste good.  So next time I make them I'll probably increase the amount of pureed beans.


I probably wouldn't make these again. I didn't use the optional raisins but would recommend them, it may have made them not as banana-ey.


I used all ground oats instead of oats and flour, went light on the nutmeg, and threw in some applesauce with my banana. But the batter was still too dry, and chocolate needs fat to taste good, so I dumped in about 1/4 cup of melted peanut butter and a splash of soymilk. Pretty good.
I found some sliced and smashed almonds that i mixed in with my final batch in the oven, definitely gave them texture. I also think they cook better at 325 for 10 minutes.
