Chocolate, Sunflower, Cranberry Cookies

What you need: 

1/3 cup of fructose (or any other kind of sugar you like)
1/4 cup of canola oil
1 teaspoon of vanilla
2 tablespoons of water
1 cup of all purpose flour (I am allergic to wheat so i use spelt flour and it works really well)
1/2 teaspoon of baking soda
pinch of salt
1/3 cup carob chips
1/3 cup of sunflower seeds (or as many as you like)
1/3 cup of cranberries (or as many you like)

What you do: 

Heat oven to 375 degrees. Mix fructose, canola oil, vanilla and water into a large bowl. Stir in the flour, baking soda, salt, carob chips, sunflower seeds and cranberries.
Drop teaspoons of cookie dough about two inches apart on a ungreased cookie sheet. Cook for 9 or 10 minutes
WARNING: These cookies burn quite easily so just make sure you only cook them for about 10 minutes. I learned that the hard way when I forgot about them when I was watching TV!
These cookies are absolutely delicious!!! My whole family loves them and they only are only 80 calories! If you don't like sunflower seeds or cranberries, they are great without them too. I hope you enjoy them as much as i have!!

these were very yummy!  I thought they were a little flour-y but my best friend,  a omni really like it them.

These cookies were so yummy! I made a batch to bring to my boyfriend's parents' house for the evening and everyone (including the grandkids) told me how good they were. His mom especially liked them  ;)b
I followed the recipe exactly (using agave nectar for fructose and only 1/4 cup sunflower seeds) and they came out so fluffy that I have a feeling they'll make great muffins! I'm planning to double the first 6 ingredients and leave the last 3 alone... I'll let you know how it goes!
I'd also like to try subbing the apple sauce for oil and using half whole wheat flour, half white for an even healthier treat! The batch I just made was 15 cookies at about 64 calories each.

I just made these tonight and they're a HUGE hit. I used mini chocolate chips, but next time I'll use less b/c the batter was too chippy and difficult to form. I added some extra flour so they're easier to handle. Also for some reason they took longer for me (maybe 12 minutes).

Overall, they're awesome. I'm definitely taking some in for my students.

There might be something missing from the recipe.  I ended up adding 1/4 of a water-applesauce mixture to the dough.  For the first batch I thought the recipe said to bake them for 12 minutes.  I can attest that they do burn easily.  The next batch I promptly removed from the oven and all was well.  The cookies were flakier than chewy.

These sound great!  I will have to try them!  Thank you for posting this recipe.  I love to try new things, and I might just experiment on dehydrating these to see how they turn out.
