Chopped Raw Salad
1 head broccoli
2 carrots
1 clove garlic
1 tomato
1 avocado
Lemon juice, to taste (1/2 lemon is good)
1 tablespoon raw tahini
Pinch sea salt
Raw sesame seeds, to garnish
4 to 6 cups sprouts or greens, to serve
This is easy for using up veggies you have in the fridge. Feel free to add other veggies--the dressing is good on all sorts of things!
1) Clean and cut broccoli (including stem), tomato, and carrots. Place into food processor and pulse until chopped well but not too mushy. Remove and set aside.
2) Place garlic, lemon juice, tahini, and half of the avocado into food processor and blend until creamy. Dice up other half of avocado and mix with veggies.
3) Combine dressing with veggie mixture. Serve on some sprouts or salad greens and sprinkle with raw sesame seeds.

I used broccoli, cauliflower, and a carrot and doubled up the dressing....I decided not to add the tomato, but now I wish I did - I think I'll chop one up tonight and add it to the leftovers!
I served it on top of baby spinach.
This is so delicious with the additions of Cauliflower, Cilantro, sunflower seeds, jalapeno and a can of GARBANZO BEANS, but i guess the garbanzo beans make it not raw anymore. but i've never tried raw garbanzo beans.
Absolutely delicious really lite and fresh. I added cilantro, a serano pepper, and an apple. You can really do a lot with this salad, cabbage would be really delicious as well and I love the idea of adding cauliflower like the other reviewer mentioned. Can't wait for the summer this is going to be in my fridge very often.
Delicious! It was just a bit dry... next time I may double the dressing ingredients.

Wow! This salad is great! I used the juice of a whole lemon and 2 gloves of garlic. It's so tasty and fast! I will definitely make it again.
