Classic Banana Bread
2 large overripe bananas
1/4 cup sucanat or other "white" sugar
1/4 cup packed brown sugar
2 tablespoons maple sugar
1/4 cup softened vegan butter (I use Earth Balance)
1 1/2 cups flour
1 1/2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1. Preheat oven to 350 degrees F.
2. In a large bowl, mash the bananas until creamy, some small lumps will remain. Using a wooden spoon, mix in the three sugars and vegan butter.
3. In a separate bowl, combine flour, baking powder, baking soda and spices. Mix the dry ingredients into the wet ingredients until just combined.
4. Lightly grease and flour one loaf pan. Pour in batter. Bake 35-40 minutes until a toothpick inserted into the middle comes out clean.
Variation: add 1/2 cup dark chocolate chips and/or 1/2 cup chopped walnuts.
