Classic Pasta Salad

What you need: 

2 cups dried macaroni
1/4 cup Vegenaise
1 teaspoon cider vinegar
1 tablespoon mustard
2 tablespoons chopped onion (white or red)
Here's where you can be creative. Add in whatever you have on hand... here are some suggestions:
2 tablespoons chopped celery
2 tablespoons chopped carrots
2 tablespoons chopped green pepper
1 tablespoon chopped very fine pickles
salt and pepper to taste

What you do: 

Boil macaroni.. leaving slightly firm (al dente)
Drain the noodles. Rinse with cold water and drain again.
Add macaroni and the rest of the ingredients to medium sized bowl. Mix thoroughly. Refrigerate for at least 15 minutes and serve.

SO HOW'D IT GO?

Very tasty!  I'm eating it as I write this.  I added everything listed but the pickles, just because I had all of lying around.  I think next time i might try to mix in some cheese and see how that goes.  Make sure to cook that pasta al dente!  I didn't rinse it after I cooked it, though, but to each their own.
