Classic Peanut Butter Cookies

What you need: 

1/2 cup vegan margarine
1/2 cup sugar
1/2 cup brown sugar
1/2 cup peanut butter
1 teaspoon vanilla
1 cup flour
2 teaspoons baking soda

What you do: 

Preheat oven to 375F.
Combine margarine and sugars until blended. Add vanilla and peanut butter until smooth.
In a separate bowl, mix dry ingredients, and then mix them into wet ingredients.
Roll into balls and place on cookie sheet. Make criss-cross marks on top of the cookies with a fork.
Bake for 10 minutes.

I just made these cookies a few hours ago and they turned out incredibly yummy :) I used Nature Balance Peanut Butter and Coconut spread and the extra oil made them spread a little more than I wouldve liked but they taste so amazing it doesnt even matter :) my boyfriend is a carnivore and is going to absolutely love them! I did add a little applesauce also because they seemed a little dry but I think that is also why they didn't turn out as thick like a real cookie, but overall I love them and will definitely be making them again :)

i just don't know what to think about this recipe.  i love the simplicity of the ingredients and the instructions, but they just didn't turn out very good for me.  the flavor was great, but they practically crumble at the touch.  i used the suggested baking powder instead of baking soda.  i had to add extra flour as the batter was super moist and was NOT allowing for being shaped into balls when made as instructed.  they taste good, but i have a feeling they're going to end up all falling apart as soon as i put them into a container.  :P

I made this for a family Christmas party and it was great!
Although, I made it with crunchy peanut butter because that was the only type of peanut butter that I currently had on hand, but it still came out tasty nonetheless.
Although, the cookies were a bit on the dry side, but once they cooled they hardened and stopped falling apart so much.

But, they were really good and even my super-picky, anti-vegan brother enjoyed them!  ;)b

i followed everyone's advice and used baking powder instead of baking soda, turned out perfect! i might cut back a little sugar next time, but they're delicious. especially with my coffee!!  :)>>>

This was a very simple and great recipe. I didn't have baking soda so I used a teaspoon of baking powder and it came out fine. I also thought that they were really soft after 10 mins of baking so I left them in for an extra 3 minutes. They are really crispy(still good though) but moral of the story: 10 minutes is plenty.

I'm taking them into the office tomorrow and I expect everyone will love them!

These cookies are sooo good....this is my standard recipe, they always turn out delicious, slightly chewy. At xmas time, i added a hershey kiss for those classic kiss cookies (im not vegan), and other times i add choc chips. but i  must say, these stand on their own, they dont need the chocolate!

my omni brother even says they are "the best PB cookies in the world" (even though he doesn't travel so much!  ;D).... he proceeded to eat half the  batch!

you can safely cut back on a bit of the sugar too. which i did, but then rolled the dough in  a bit of the organic sugar, to add a bit of sweet crunch to the outside.

Omg, what is it with omnis and vegan cooking?! I'm thinking about makin this for my bff on her b day. XD

I made these yesterday, all gone in one day! (family of 4, 1-vegan  3-omni)
Looks like I have to make more today, gladly.
I followed the recipe and had no problems.
Very easy to make and the cookies were perfect.

USE BAKING POWDER!!!!

I used baking soda and you can feel it on your tongue and they were pretty salty.  I think if I had used baking powder they would have come out better.  I'll definitely be making them again only with the above modification.

These turned out great.  For some reason, my dough was a little dry so I added a couple extra tablespoons peanut butter.  The cookies were buttery and tender--a melt in your mouth type cookie.  I added chocolate chips and they were great.  Simple and yummy!
