3/4 cup vegan white sugar
3/4 cup brown sugar
1 cup butter or vegan margarine
2 cups flour (try a white-wheat blend)
1/2 teaspoon salt
1/2 teaspoon baking soda
1 teaspoon vanilla extract
1 1/2 - 2 cups vegan chocolate chips
1 cup walnuts, crushed
1/4 cup shredded coconut
1) Preheat the oven to 375 F.
2) Cream together vegan sugars and vegan butter. Add bananas and blend until smooth.
3) In a bowl, combine flour, salt, and baking soda. Mix by hand then add to batter. Stir in the vanilla, chocolate chips, walnuts, and coconut.
4) Drop by teaspoons onto ungreased baking sheets and bake for 10-14 minutes (until brown around the edges).
Cool for about 2 minutes before transferring the cookies to a rack or brown paper bag.
