Coconut and Veggie Soup

What you need: 

1 bag of frozen veggies
1 can of coconut milk
1 can of mixed beans
1/2 cup of shredded coconut
salt and pepper to taste

What you do: 

This recipe is fairly simple, and requires a food processor.
In a medium to large saucepan, add frozen veggies to boiling water. Let this boil for long enough that the veggies will soften.
Once the veggies have softened and cooled, put this mixture (water and veggies) through the food processor until it becomes a puree. Pour into a bowl, and leave aside.
Next, rinse the mixed beans, and along with a little water, put this through the food processor until it is a good texture. Add this to the veggie puree mix.
Add the coconut milk to the veggie and bean mixture, along with the shredded coconut, and season with salt and pepper.
This soup should be served hot, and can be stored in the freezer, until served.
