Coconut Chia Pudding

What you need: 

1/4 cup chia seeds
1/8 cup hemp seeds
1/4 cup raisins
3/4 cup nondairy milk (I use almond)
1/4 cup shredded coconut
1/8 cup cacao nibs
1 banana, sliced (or other fruit)
1-2 teaspoons agave, optional

What you do: 

1. Combine chia seeds, hemp seeds, raisins, and milk in a bowl, and stir well to combine. Leave to sit for about 5 minutes to let the milk get absorbed.
2. Gradually fold in the coconut and cacao. Top with fresh fruit slices, drizzle with agave, and enjoy!

SO HOW'D IT GO?

Variation: The other morning, I made this with no coconut and substituted a heaping spoonful of almond butter. I also doubled the hemp seeds for a protein boost and to emphasize the hearty, nutty flavour. Finally, I added extra bananas and mashed some of them into the pudding for a delicious, nutritious breakfast!
