Coconut Pecan Frosting

What you need: 

1 1/2 cups shredded coconut
1 cup pecans
3/4 cup sugar
1/2 cup vegan margarine
1/2 cup nondairy milk
1 teaspoon vanilla

What you do: 

1. Boil together all ingredients in a medium to large saucepan over medium-high heat for 12 minutes, stirring constantly.
2. Pour, then spread on cake while frosting is still warm.
3. Let set up for a few minutes before serving (sets up faster if you cover it and place it in the fridge).
I used this for my German Chocolate wedding cake and it was a big hit! No one believed it was vegan.

This was so good!!  It was the best coconut pecan frosting I have ever had.  My husband and I ate half the cake I made in one night.  I highly recommend this recipe.

This frosting was HANDS-DOWN the best frosting I have EVER EVER made. The office LOVED it and couldn't believe it was vegan!

I want to ask if I can use dessicated coconut or i need to use fresh

I'm not sure if the person who posted this recipe is from the U.S. but if they are shredded coconut usually means dessicated coconut (which is either sweetened or unsweetened, and sold in packages near the sugar or in bins if you buy it from a healthfood store). If a recipe needs fresh coconut it will usually specify 'fresh'.

Very yummy! I made this for my grandparents and my grandma (who has been cooking her whole life) loved it! We used it on wacky cake. My dad, who doesn't like pecans, still thought it was excellent. I loved it! Very tasty! ;D

I use the dried up kind (but not the freeze dried ones).

I've never tried using fresh, but I honestly, would just save the time by using the kind in bags.

I MADE THIS RECIPE FOR MY CARROT CAKE...AND HAD ABOUT HALF OF IT LEFT......MY DAD COMES AND ATE THE WHOLE THING RIGHT OUT OF THE PAN!!!!!!!

AMAZING!  Followed the recipe to a T, put it on while my chocolate cake was still hot, then put whole thing into fridge to set.  Worked out really well, stuck well, looked pretty and tasted amazing.
