Coleslaw

What you need: 

4 cups green cabbage, shredded
4 cups red cabbage, shredded
1/2 cup carrots, grated
1/4 cup green onion, minced
3 tablespoons apple cider vinegar
3 tablespoons sunflower seeds (roasted, unsalted are best)
2 tablespoons thawed apple juice concentrate
1 tablespoon lemon juice
1 tablespoon prepared mustard
1 inch fresh ginger, grated
pinch fresh ground black pepper

What you do: 

Toss together all ingredients in a bowl. Chill well before serving.
This is the yummiest vegan coleslaw I've had yet! Enjoy!
