Corn and Tomato Salad
3 ears fresh corn
4 tomatoes, diced (or as many as you like)
2 tablespoons extra virgin olive oil
1-2 tablespoons white balsamic vinegar
Sprouts of any kind ( alfalfa, broccoli, etc. )
Pepper- to taste
Salt- to taste
1. Remove kernels from corn and place in a large bowl. Dice up tomatoes and put them in the bowl with the corn.
2. Pour the oil on top, then one tablespoon of the vinegar. Mix well and add salt and pepper to taste.
3. Serve with sprouts on top, and another drizzle of vinegar.
