Country Style Vegetable and Pasta Soup
1 onion diced
1 carrot diced
2 celery sticks diced
11 oz/350g orange sweet potato
2 cups corn kernels
4 cups vegetable stock
1 cup small spiral pasta
2 teaspoons olive oil
1. Heat oil in a large saucepan over a low heat. Cook the onion, celery and carrot until soft (about 10 mins).
2. Add the sweet potato, corn and stock. Bring to the boil, then reduce heat and simmer, covered for about 20 mins or until the vegetables are tender.
3. Add the pasta to the pan. Bring back to the boil. Reduce the heat and simmer for 10 mins or until the pasta is cooked to your liking. Serve immediately.
This is super yummy and really healthy.
I also make it with pumpkin in place of the sweet potato and works out great :P
