Cous-Cous Delight

What you need: 

1 1/2 cups of couscous
2 large firm tomatoes
1/2 a bunch of spring onion
1 tin of chick peas
1 cup of corn kernels
1/2 red capsicum
1/2 green capsicum
bunch of parsley
4 cloves of garlic (don't have to put that much in!!!)
*Salad dressing*
1/4 cup of vinegar
2 tablespoon of mayo
2 Teaspoons of french mustard
salt and peper to taste
3 cloves of garlic (not essential, again)
1/4 of salad dressing
chili - as much as you desire

What you do: 

Put couscous in large bowl; add cover with hot water. Allow the couscous to absorb water, this takes about 10-20 minutes. Chop the tomatoes into cubes - if possible chop basically everything as fine or chucky as you please. When the couscous is ready mix everything together. Salad dressing: Chop chilli and garlic finely. Add everything together and shake well. Pour the salad dressing into the couscous; mix well. Serve on a plate and eat eat eat. This can be eaten right away or stuck in the fridge for tomorrows lunch!!!
