Cowgirl Cookies

What you need: 

2 teaspoons ground flax + 2 tablespoons boiling water
1/2 cup canola oil
3/4 cup brown sugar
1/2 cup sugar
1 teaspoon vanilla extract
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon salt
1 1/2 cups oat flour
3 cups oats
1/2 cup dried raisins
1/4 cup chocolate chips
1/4 cup walnuts
2 tablespoon nondairy milk (I use soy)

What you do: 

1. Preheat oven to 350 degrees F. Lightly grease a cookie sheet. To make egg replacer, combine ground flax seed and boiling water in small dish and whisk together until it reaches an egg-like consistency.
2. In large bowl, combine oil, sugar, "eggs", and the vanilla. Gradually add in the dry ingredients and then add in the nuts, chips, and raisins.
3. Drop rounded tablespoonfuls on prepared cookie sheet. Bake 8-10 minutes.
Source of recipe: I had some kickass trail mix, decided to make cookies with it, and this is what happened.
