Cran-Pear Sweet Potatoes

What you need: 

3 tablespoons apple juice concentrate
3 tablespoons pure organic maple syrup, optional
1/2 teaspoon cinnamon
1/8 teaspoon allspice
1/8 teaspoon cloves
1 teaspoon canola oil
2 sweet potatoes, peeled and sliced 1/4" thick
1 large chopped pear (3/4-1 cup)
1/2 cup fresh cranberries or dried sweetened craisins

What you do: 

1. Preheat oven to 400 degrees F. Mix liquids and spices in a large bowl.
2. Coat sweet potatoes. Gently toss in pears and cranberries.
3. Arrange in a single layer in a baking dish. Cover tightly with foil (steam cooks the potatoes).
4. Bake for 30-40 minutes.
Delicious made sweetener-free and with syrup poured over the top while serving. Try adding some chopped apples and raisins!

SO HOW'D IT GO?

Very good!  I also used OJ (because that's what was in the house).  Great way to use one of those pears that was never going to ripen.  This recipe goes into the regular repertoire for sure.

Awesome recipe.  I used raisins instead of cranberries and OJ instead of AJ.  Make sure to cut your potatoes SMALL, some of mine were a bit big and didn't cook thoroughly.

OMG!!  This was wonderful.  My guests loved this recipe as did I.  This is going to be a standard recipe for our Thanksgiving table from now on.
I didn't grow up with Thanksgiving because I am originally from South Africa and am so dependent on this website and to people who are generous enough to share their recipes with everyone.  I really appreciated having such a delicious dish to share with my American-born hubby!  Thank you.
