Cranberry-Broccoli Slaw

What you need: 

1/4 cup raw apple cider vinegar
3 tablespoons canola or vegetable oil
2 tablespoons vegan sugar or other sweetener
1/2 teaspoon black pepper
1/2 teaspoon celery seed
salt, to taste
1 (12-ounce) bag organic broccoli slaw
2 stalks celery, minced
1/3 cup dried cranberries
1/3 cup pineapple, diced or greed apple, diced
1/4 cup roasted sunflower seeds
2 tablespoons minced red onion

What you do: 

1. In a bowl, combine the apple cider vinegar, vegetable oil, sugar, black pepper, and celery seeds, and salt. Taste and adjust seasoning to preference.
2. Mix in remaining ingredients (broccoli slaw, celery, cranberries, pineapple, sunflower seeds, and onion).
3. Let this sit for at least a half hour, stirring a few times.

This is a really amazing salad! I've made it at least 5 times now as written, except I don't use the seeds. I use green apple, raw apple cider vinegar, and either agave nectar or maple syrup as the sweetener. It gets better the longer it sits in the fridge, and it's also good as a topping on sandwiches or burgers!

Oh my goodness, this was an amazing salad! Me and my mother scarffed the whole salad in two days. It's exceptionally good with crushed pineapple in it's own canned juice and two tablespoons of agave nectar instead of the sugar! I din't add apples to it, just the pineapple and dried carnberries. The best part about this recipe was that it gets better the longer it marinates in the refrigerator. This will be the hit of our next family party! Thanks for the recipe! We give it 5 stars!

I modified this recipe slightly to what I had laying around the kitchen. I didn't have celery seed or an onion so I omitted both. I added fresh blueberries instead of apples/pineapples and walnuts instead of sunflower seeds. I wish I had the onion but it still came out very well. This is a recipe where you can add a lot to it and it would still come out fantastic! A very quick, easy & delicious side dish to my dinner! Thanks!

This was absolutely freaking amazing!  I added mandarin oranges and used the juice to make the dressing.  I used almonds instead of seeds and my cranberries were the "orange essence" kind...yum.
