Cranberry-Orange Bread

What you need: 

2 cups all-purpose flour
1 cup sugar
1/2 teaspoon salt
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1 cup cranberries (fresh or frozen)
1/2 cup walnuts, chopped, optional
2 tablespoons vegetable oil
1/2 cup unsweetened orange juice
1/2 tablespoon orange zest
1 egg replacer (I use Ener-G Egg Replacer)

What you do: 

1. Preheat oven to 375 degrees F. Grease and flour loaf pan. In a large bowl, mix dry ingredients (flour, vegan sugar, salt, baking powder and baking soda).
2. In a small bowl, add walnuts, cranberries and 1/2 cup of dry mixture to coat the nuts and berries.
3. In a measuring cup, add oil and add hot water to make 3/4 cup. In a medium bowl, mix oil/water mixture, orange juice, orange zest and Ener-G Egg Replacer.
4. Combine liquid mixture to dry mixture (don't overmix!). Fold in nuts and berries. Bake for 1 hour.
I gave this bread away as Christmas presents last year and it got rave reviews!

SO HOW'D IT GO?

this bread is delicious!  it has wonderful flavor, sweet without being overpowering.  the inside was a wonderful soft texture, with the outside slightly crunchy/chewy.  my non-vegan friends LOVED it!

5 stars! Amazing! I used frozen cranberries and it turned out fine...

My modifications: WW pastry flour instead of all purpose, applesauce instead of oil, used cooking spray to grease the pan, and a flax egg instead of Ener-G for a healthier bread... it turned out perfect :)

quite good! whole wheat pastry flour worked well.  it was tender, definitely lighter than your average sweetbread.  Great with breakfast coffee all week :)

I made this last night..very nice! I will be making this again. I might experiment with different fruits too.  ;)b

This is a wonderful recipe, ... I made it on Christmas Eve and it fit in perfectly with all the Christmas cookies, ... my family and friends loved it.

okay just to make sure i can used uncooked frozen cranberries to make this? or do i have to cook te cranberries first?

OH...WOW....this is SO DELICIOUS (and pretty, too)  :)>>>!  Followed the recipe to a T.  Taking it to a be-lated Thanksgiving gathering, tomorrow (with a crowd of people that are very hesitant to try anything vegan...or healthy for that matter)...if they'll try it, I'm sure they'll love it.

This is delicious! I made two of them of both of the homes i had to visit for the holidays and i got great reviews for both! I used 3/4 cup of sugar and doubled the amount of orange peel. Also instead of the ener-G egg replacer (i dont personally like using it) i used 1/4 cup of silken tofu blended smooth as a sub. Wonderful!

:)  I made this recipe into muffins for Christmas morning and they were wonderful.  I made the recipe as stated.  I used fresh cranberries and I did chop them  in half.  I used the orange glaze on top.  Yummy!
