Crazy Good Banana Muffins

What you need: 

1 1/2 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
4 bananas, mashed
3/4 cup white sugar
1/4 cup unsweetened apple sauce
3 tablespoons vegetable oil
1/2 cup chopped walnuts, optional

What you do: 

1. Preheat oven to 375 degrees Fahrenheit. Line 10 muffin cups with muffin papers.
2. In a large bowl, mix together flour, baking soda, baking powder, and salt.
3. In another bowl, beat together bananas, sugar, applesauce and oil.
4. Stir the banana mixture into the flour mixture just until moistened. Stir in walnuts, if desired.
5. Spoon batter into prepared muffin cups. Bake in preheated oven for 18-23 minutes, or until a toothpick inserted into center of muffin comes out clean. Do not over bake.

SO HOW'D IT GO?

Great muffins, a little dry though. Not sure how to correct for that. Maybe I just don't bake them right.

I have made these 5 times, now, and they are the moistest muffins ever (they really are so perfectly delicious)  :)>>>!  However, I do change a couple of things slightly - I use 3 large bananas (instead of 4) & a 1/2 cup of applesauce (instead of a 1/4).  Not sure if that's what does the trick, but you might want to give it a try?

I LOVE these!  I have had so little success in the kitchen making vegan items that the fact this has turned out beautifully has me psyched.  Thank you so much for posting this recipe  ;)b

this is a good solid muffin recipe. i kept them in the fridge and the flavor got better the next day.  if i make them again, i will definitely try to make them a day ahead of when i plan on eating them.    they turned out well using white whole wheat flour, and i also added some vanilla extract.

The only thing I did differently (not by choice) was use org. cherry applesauce and whole wheat pastry flour because those were all I had.  My mom and my toddler both loved them.  So THANK YOU! :)

These muffins were a definite hit! I got enough comments about how "yummy and moist" they were to make the whole dessert experience seem slightly obscene ;)

Okay, these were crazy good!  The applesauce I used was Whole Foods brand with cinnamon but you couldn't really taste it.  I made 3 plain banana, 3 with dark chocolate chips (yummmmm) and 6 with walnuts.  The recipe was perfect for 12 muffins.

These were OH SO VERY, VERY GOOD  :)>>>!!!  I can't remember the last time I enjoyed a muffin that much.  Mmmmmm....yes...I do believe I will have another, now  ;).

Crazy good is right!  I didn't have any applesauce so per skits suggestion, I added oil and instead of soy milk (only had chocolate soy) I used vanilla soy creamer and a little vanilla extract.  Per lynnabeana's suggestion, I sprinkled oats on top and mixed in vegan chocolate chips and the walnuts.  OMG they are so good!  I made 6 big ones and 5 regular sized ones and they are really yummy.  Thanks for the recipe!
