Creamed Coconut Spinach

What you need: 

2 tablespoons olive oil
1/2 large sweet onion
2 tablespoons minced garlic
1 lb fresh spinach leaves
1/2 cup light coconut milk
1 tablespoon lemon juice
1/2 teaspoon salt
1/4 teaspoon white pepper
1/2 teaspoon nutmeg

What you do: 

Saute garlic & onions until onions are translucent. Add spinach until they start to wilt then add seasonings, coconut milk, and lemon juice. Saute until completely wilted, serve, and enjoy!

SO HOW'D IT GO?

I put this over pasta as well - great recommendation! I added half a jar of sun-dried tomatoes and a little extra lemon juice. My hard-to-please boyfriend said it was "different" but really good!

Thanks for submitting this recipe, I made it last night and was not disappointed.  Creamed spinach is a new thing for me and I really liked this.  Didn't tweak it save for making it for two with extra coconut milk and adding it to spelt tagliatelli (sp?).  Even the fella liked it! 4 stars!

I love this recipe! I made it today and it's so awesome. I love coconut! I was very skeptical about this at first but it turned out great! I love the lemon in it. I put 2 tbs. of lemon instead of just 1. Thank you for posting this!!!  ;)b
