Creamy Cauliflower Soup

What you need: 

1 large cauliflower
1 cup soy milk
1/5-3/4 cup nutritional yeast
salt to taste
pepper to taste

What you do: 

1. Cut cauliflower into large pieces and steam until tender.
2. Drain water.
3. Return to pot and add soymilk, nutritional yeast, and salt and pepper to taste. Cook and stir till cauliflower becomes the consistency you want.
You may have to adjust the amount of soymilk and nutritional yeast based on the size of your cauliflower. A large cauliflower will make 2-3 big bowls of a creamy and cheesy, low-fat, low-carb yummy soup.
